In need, well maybe not need, but wanting an aperitif in a hurry, I remembered a lovely plum I had from Portobello yesterday and the plan was born.
Inspired by the Bellini, this is my version of a luscious Champagne cocktail. Who needs a reason?
Serves 2-3
1 plum, stoned and peeled
6 mint leaves, plus more for garnish
powdered sugar, to taste (optional)
Champagne or Sparkling wine

Puree plum and mint in a food processor. Add powdered sugar to taste.
Fill glass with Champagne or sparkling wine. Gently add puree. This order will help keep the sides of the glass free of the puree. Garnish with mint leaves. Enjoy and repeat! Cheers.
For those wanting non-alcoholic, replace Champagne with lemonade or sparkling water.
